Our Mission
Our mission is to bring traditional salt-making back to life and inspire homes and chefs to discover the authentic taste of the ocean. We harvest our organic fleur de sel and virgin sea salt by hand in the Bahía de Cádiz Natural Park—pure, rich in native minerals, and sun-dried without a single chemical additive.
Biodiversity
Artisanal salt marshes are among the rare places on Earth where human care directly enriches wildlife. In the Bahía de Cádiz, our traditional salt flats create a protected wetland sanctuary where dozens of migratory and coastal birds find the perfect haven to rest, feed, and raise their young.
Research
Committed to the future of the salt pans
We work so that the salt-making tradition continues to be part of our future. For this reason, we collaborate on various initiatives aimed at protecting this heritage and improving the conditions of those who keep the craft alive.
Innovation for traditional salt-making
We collaborate with the University of Cádiz (UCA) on the design and development of new tools for salt workers, aiming for them to be more sustainable, ergonomic, lightweight, and efficient. The goal is to ease daily work and adapt traditional tools to modern needs, without losing the essence of the craft.
Commitment to our wetlands
We also collaborate with SALARTE, making a financial contribution for every package we sell, directly supporting research projects, wetland conservation, and the revitalization of traditional salt-making crafts.
Because every pack of Salinas de Cádiz not only brings with it the salt of our land: it also helps care for the environment, preserve a unique landscape, and keep alive a craft that is part of our heritage.

Questions about our project
Learn about the origins of Salinas de Cádiz, our work in the Bahía de Cádiz, and the ancient master salinero craft.
When and how was Salinas de Cádiz and the Dama Blanca brand founded?
Salinas de Cádiz was founded in 2020 by Juan Carlos Sánchez de Lamadrid and Macu Gómez under the Dama Blanca brand as a family initiative dedicated to preserving 3,000 years of artisanal harvesting heritage in the Bahía de Cádiz Natural Park.
Where are our artisanal salt flats located?
Our artisanal salt flats are located at Salina La Esperanza in Puerto Real (Cádiz), in the heart of the Bahía de Cádiz Natural Park, a wetland of supreme ecological value designated as a RAMSAR site and Special Area of Conservation (SAC).
What is the role of the master salt artisan (maestro salinero)?
The master salinero is the guardian of millenary know-how. He controls natural tidal flows, monitors Baumé salinity in every pond, and delicately skims the fleur de sel at dusk with traditional wooden liaseras without crushing the crystals.
Why is the brand called Dama Blanca?
Dama Blanca is a poetic name paying homage to the Pied Avocet (Recurvirostra avosetta), an elegant bird that nests in our salt flats, symbolizing product purity and ecological balance.
