Criteria of organic culture
Obtaining organic sea salt certified under the mark Dama Blanca It responds to a rigorous traditional culture methodology that prioritizes the conservation of the ecosystem and respect for the natural biogeochemical cycles of the Bahia de Cadiz Natural Park.
Unlike industrial table salt farms where concrete and extraction crystallizers are used with heavy machinery, our process is carried out in crystallizers excavated directly in the living native marsh clay.
The circulation of Atlantic water through the network of mats, labyrinths and doors is done through the passive force of tides and gravity, completely eliminating the consumption of fossil fuels or mechanical pumps.
CAAE certification requirements
The ecological certification issued by the Andalusian Committee for Ecological Agriculture (CAAE) ensures the absolute traceability of the product under European organic production regulations. This certification explicitly prohibits the use of any chemical agent at all stages of extraction, drying or packaging:
| Analytic requirement / Parameter | Conformity Dama Blanca | Conventional salt (industrial retail) |
|---|---|---|
| Official Ecological Certification | ✓ Official CAAE certification | Ο Uncertified |
| Additives and anti-caking agents (E-535) | Total absence | - With Sodium Ferrocianide |
| Chemical washing and refining | Ο Without Chemical Processes | ▪ Industrial Whitening |
| Presence of Microplastics | ✓ Certified 0% | ✗ Variable / Not analysed |
Pillars of organic production
Our organic salt is based on three essential principles of sustainability and environmental respect:
Manual Harvest
Harvested at dusk with a traditional wooden pole and rake in the clay crystallisation ponds.
Dried by the easterly wind
Natural dehydration of the sun and gaditan wind in the spikes without using fuel ovens.
Mineral Wealth
The intact conservation of the magnesium, potassium, calcium and natural iodine of the Atlantic film.
Frequently Asked Questions about Certification
What does CAAE organic certification mean for salt?
It means that the whole process, from marine catchment in the Natural Park to packaging in biodegradable jars with natural cork, complies with EU organic regulations and regular independent audits.
Is all sea salt by ecological definition?
No. Most of the supermarket salt comes from chemical-whitening and anti-caking agent industrial holdings such as sodium ferrocianide (E-535), which are prohibited in ecological terms.
How is caking prevented without adding E-535?
Preserving the natural drying to the sun and the rising wind and packing in sustainable jars with natural cork closure that will passive regulate the environmental humidity of the glass.
